Position Papers in Vegetarian Nutrition
Under this section we offer a collection of position papers on vegetarian nutrition. With the exception of the position paper of the American Dietetic Association and the Dietetians of Canada, all other position papers were written by the member of the General Nutrition Council of the General Conference of the Seventh-day Adventist Church. Adventists are known worldwide for their emphasis on healthful living and for promoting vegetarian nutrition. We are offering these position papers in several languages, including English, Spanish, French and Romanian. The Vegetarian Diet
Since 1954 more than 250 articles have been published in scientific journals on Adventist lifestyle and health. In the 1960s Loma Linda University, in cooperation with the National Cancer Institute, began to study the health of SDAs. Later, in the 1970s and 1980s, data on the Adventist lifestyle was collected and analyzed under contract with the National Institutes of Health. Adventists, in general, have 50 percent less risk of heart disease, certain types of cancers, strokes, and diabetes. Read more...
Vitamin B12 for the Vegetarian
Vitamin B12, an essential B vitamin, is of special interest to vegetarians since it is not found in any significant amounts in plant foods. In addition, vitamin B12 deficiency can result in detrimental changes in certain body functions. Dietary Fat
With the present state of knowledge, the Surgeon General's Report, the National Academy of Sciences Food and Nutrition Board, the American Heart Association, the National Cancer Institute, the Inter-Society Commission for Heart Disease Resources, the American Medical Association, the National Cholesterol Education Program, and the American Health Foundation recommend a fat intake of less than 30% of the daily calories. Based on scientific research a diet severely restricted in fat may not provide adequate nutrition.

With the discovery that saturated fats have adverse effects upon blood lipids, people turned to vegetable oils as a safe replacement for the highly saturated animal fats - the lard, beef tallow and butter used in cooking and in table spreads. Now some researchers are warning us that the plant oils may not be as safe as we once thought they were.

Milk Replacers
Soy milk was first developed in the US by John Harvey Kellogg, who was the inventor of corn flakes and granola and head of the Battle Creek Sanitarium for over 50 years. A student of Kellogg's, Dr. Harry W. Miller took Kellogg's knowledge of soy milk with him to China. Miller developed processes to make the soy milk more palatable and began production on a factory-scale in China in 1936.

Diabetes is a metabolic disorder characterized by high blood sugar levels (hyperinsulinemia) which do not return to below 120 mg/dl even after a high sugar meal and after the person has been on a high carbohydrate diet for three days. It results from inadequate production or utilization of insulin.

Seventh-day Adventist men have approximately one-half the cancer rate found in the general population. This occurs even in cancers unrelated to tobacco and alcohol both of which are known carcinogens. A likely factor is that many Seventh-day Adventists are vegetarians. First Foods for Infants
By four to six months of age babies can hold their heads up when sitting and turn away if they do not want more food. They are interested when others are eating and open their mouths when food is presented to them. By this time the baby's digestive processes are ready to assimilate food other than milk.
